Enveloppez le tofu dans du film alimentaire ou un sac de cong\u00e9lation. Vous pouvez aussi le couper en d\u00e9s ou en lamelles avant de le congeler. Cela r\u00e9duit le temps de cong\u00e9lation et de d\u00e9cong\u00e9lation.<\/p>\n<p>2. Placez le tofu au cong\u00e9lateur. Plus le temps est long, mieux c&rsquo;est.<\/p>\n<p>3. Laissez le tofu d\u00e9congeler. Vous pouvez le faire au r\u00e9frig\u00e9rateur ou \u00e0 temp\u00e9rature ambiante, ainsi que dans un r\u00e9cipient rempli d&rsquo;eau chaude si vous \u00eates press\u00e9.<\/p>\n<p>4. Retirez le tofu du film alimentaire ou du sac de cong\u00e9lation et enveloppez-le dans une serviette. Pressez-le \u00e0 la main pour en extraire l&rsquo;humidit\u00e9. La formation de cristaux de glace a cr\u00e9\u00e9 de petits trous dans le tofu. Celui-ci est donc plus poreux et l&rsquo;humidit\u00e9 s&rsquo;en \u00e9chappe beaucoup plus facilement.<\/p>\n<p><em>Conseils :<\/em><\/p>\n<p>\u2022 Cette m\u00e9thode a un impact sur la texture. Elle est id\u00e9ale pour les marinades et les sauces.<\/p>\n<p>\u2022 Veillez \u00e0 utiliser du tofu ferme et non du tofu mou ou soyeux.<\/p>\n<hr \/>\n<p><strong>M\u00e9thode 2 : cuisson dans de l&rsquo;eau sal\u00e9e<\/strong><\/p>\n<p>1. Portez environ 1 litre d&rsquo;eau \u00e0 \u00e9bullition avec deux \u00e0 trois cuill\u00e8res \u00e0 soupe de sel. Ajoutez le tofu.<\/p>\n<p>2. Laissez cuire 2 \u00e0 10 minutes. Une cuisson plus longue rendra le tofu plus ferme, comme des \u0153ufs.<\/p>\n<p>3. Retirez le tofu de l&rsquo;eau et \u00e9gouttez-le dans une passoire ou sur un torchon propre.<\/p>\n<p>4. S\u00e9chez-le encore un peu avec un morceau de papier absorbant avant de le faire mariner ou de le cuire.<\/p>\n<p><em>Conseils :<\/em><\/p>\n<p>\u2022 Cette m\u00e9thode est id\u00e9ale si vous n&rsquo;avez pas envie d&rsquo;attendre longtemps ou si vous n&rsquo;avez pas de presse \u00e0 tofu.<\/p>\n<p>\u2022 Veillez \u00e0 ne pas ajouter de sel ou tr\u00e8s peu dans vos marinades et pendant la cuisson. En effet, vous avez d\u00e9j\u00e0 cuit le tofu dans de l&rsquo;eau sal\u00e9e.<\/p>\n<hr \/>\n<p><strong>M\u00e9thode 3 : presse \u00e0 tofu<\/strong><\/p>\n<p>1. Retirez le tofu de son emballage et placez-le dans la presse.<\/p>\n<p>2. Laissez reposer pendant 15 \u00e0 30 minutes.<\/p>\n<p>3. S\u00e9chez-le avec un morceau de papier absorbant.<\/p>\n<p><em>Conseils :<\/em><\/p>\n<p>\u2022 Vous n&rsquo;avez pas de presse \u00e0 tofu ? Fabriquez-en une vous-m\u00eame. Placez le tofu entre deux torchons propres, posez une planche \u00e0 d\u00e9couper dessus et posez un livre lourd, une bo\u00eete de conserve ou un pot rempli d&rsquo;eau dessus. Laissez reposer pendant 20 \u00e0 30 minutes.
