Cuisson : 1 h 05 min<\/strong><\/em><\/p>\n<p><strong>Ingr\u00e9dients :<\/strong><\/p>\n<p>\u2022 2 grosses mangues, pas trop m\u00fbres<br \/>\n\u2022 1 citron vert bio<br \/>\n\u2022 1 oignon rouge<br \/>\n\u2022 1 piment rouge<br \/>\n\u2022 30 g de gingembre<br \/>\n\u2022 60 g de raisins secs (facultatif)<br \/>\n\u2022 12 cl de vinaigre de cidre ou de X\u00e9r\u00e8s<br \/>\n\u2022 120 g de sucre de canne<br \/>\n\u2022 \u00c9pices au choix : cumin, cardamome, coriandre, anis \u00e9toil\u00e9, curcuma, clou de girofle, etc.<br \/>\n\u2022 Sel<\/p>\n<hr \/>\n<p><strong>Pr\u00e9paration :<\/strong><\/p>\n<p>1. \u00c9pluchez les mangues, taillez-les en petits d\u00e9s et mettez-les dans une cocotte. \u00c9p\u00e9pinez le piment et hachez-le finement. R\u00e2pez finement le zeste du citron vert et pressez-en le jus. R\u00e2pez finement le gingembre \u00e9pluch\u00e9. Ajoutez le tout dans la cocotte et joignez le vinaigre, le sucre de canne, 1 c.\u00e0.c. rase de sel et les \u00e9pices de votre choix.<\/p>\n<p>2. Portez \u00e0 \u00e9bullition et laissez mijoter 1 h \u00e0 feu doux, en m\u00e9langeant de temps en temps. Ajoutez les raisins secs et rectifiez la pr\u00e9paration selon votre go\u00fbt (plus acide, plus sucr\u00e9e, etc.). Poursuivez la cuisson encore 5 min, ou jusqu\u2019\u00e0 ce que le chutney ait la consistance \u00e0 votre go\u00fbt.<\/p>\n<p>3. Versez imm\u00e9diatement le chutney dans des pots st\u00e9rilis\u00e9s, fermez-les et retournez-les jusqu\u2019\u00e0 complet refroidissement. Conservez jusqu\u2019\u00e0 6 mois au frigo. Si vous allez le consommer dans les 10 jours, versez simplement dans un bocal et conservez au frigo.<\/p>\n<p>4. Servez avec des plats indiens, des viandes grill\u00e9es, du fromage, du foie gras, sur du pain ou sur des wraps avec des filets de poulet effiloch\u00e9s. Top aussi en laquage sur des l\u00e9gumes ou du poulet grill\u00e9. Id\u00e9al sur du riz nature ou cuisin\u00e9 pour un boost de saveur suppl\u00e9mentaire.<\/p>\n<hr \/>\n<p><strong>Astuces :<\/strong><\/p>\n<p>\u2022 Vous pouvez remplacer les mangues par d\u2019autres fruits au choix : prunes, pommes vertes, figues, p\u00eaches, etc.<\/p>\n<p>\u2022 Pour st\u00e9riliser facilement des bocaux, faites-les chauffer 10 min au four \u00e0 150 \u00b0C, en d\u00e9butant \u00e0 froid. Laissez-les refroidir dans le four \u00e9teint.
