Depuis des si\u00e8cles, les cuisiniers du monde entier ajoutent une touche chaude et sucr\u00e9e au caf\u00e9, aux plats de riz et aux p\u00e2tisseries.<\/p>\n<p>Si la cardamome ne fait pas encore partie de votre assortiment d&rsquo;\u00e9pices, il est grand temps. Voici pourquoi.<\/p>\n<h2><strong>QU&rsquo;EST-CE QUE LA CARDAMOME ?<\/strong><\/h2>\n<p>La cardamome est une \u00e9pice obtenue \u00e0 partir des gousses de la plante cardamome, proche du gingembre et du curcuma. Les gousses triangulaires de la plante sont constitu\u00e9es de grappes de graines en forme de fuseau avec une fine enveloppe ext\u00e9rieure qui peuvent \u00eatre utilis\u00e9es enti\u00e8res ou moulues.<\/p>\n\n            <\/div>\n            <\/div>\n<\/section>\n\n\n<section class=\"content-section content-section--top-mask content-section--turquoise\">\n        \n    <div class=\"image-with-text container container--small\">\n                    <div class=\"image-with-text__content\">\n                <h2><strong>D&rsquo;O\u00d9 VIENT LA CARDAMOME ?<\/strong><\/h2>\n<p>La cardamome est issue des graines de l&rsquo;Elettaria cardamomum. C&rsquo;est la reine des \u00e9pices. \u00c0 l&rsquo;origine, la cardamome provient des for\u00eats humides du sud de l&rsquo;Inde. La cardamome noire a une note fum\u00e9e et est connue pour son ar\u00f4me complexe, terreux et doux-amer. C&rsquo;est l&rsquo;ingr\u00e9dient principal de tout m\u00e9lange d&rsquo;\u00e9pices traditionnel pour le cha\u00ef. La cardamome blanche a une saveur moins prononc\u00e9e (il s&rsquo;agit essentiellement de cardamome verte blanchie). Le blanchiment rend les ar\u00f4mes l\u00e9g\u00e8rement plus ternes. La cardamome blanche est utilis\u00e9e dans les p\u00e2tes l\u00e9g\u00e8res et les produits de boulangerie pour \u00e9viter la d\u00e9coloration.<\/p>\n<h2><strong>DANS QUELLE CUISINE LA CARDAMOME PEUT-ELLE \u00caTRE UTILIS\u00c9E ?<\/strong><\/h2>\n<p>Bien que la cardamome soit \u00e9troitement associ\u00e9e aux plats de l&rsquo;Asie du Sud-Est, c&rsquo;est une \u00e9pice populaire dans le monde entier, utilis\u00e9e dans une vari\u00e9t\u00e9 de plats \u00e0 base de riz provenant de diff\u00e9rents pays, communaut\u00e9s et cultures, y compris la cuisine scandinave, moyen-orientale et arabe.<\/p>\n<p>La Su\u00e8de est l&rsquo;un des pays o\u00f9 l&rsquo;on consomme le plus de cardamome. L&rsquo;\u00e9pice y joue un r\u00f4le central dans une friandise embl\u00e9matique, le kanelb\u00fcllar \u00e0 la cardamome : un petit pain sucr\u00e9 \u00e0 l&rsquo;ar\u00f4me complexe de cardamome dont on go\u00fbte la saveur piquante, fruit\u00e9e et menthol\u00e9e.<\/p>\n<p>La cardamome verte est principalement utilis\u00e9e dans la cuisine scandinave et du Moyen-Orient. Dans les recettes de l&rsquo;Inde et d&rsquo;autres pays asiatiques, on trouve \u00e0 la fois de la cardamome noire et de la cardamome verte. Il est souvent indiqu\u00e9 quelle vari\u00e9t\u00e9 utiliser.<\/p>\n<h2><strong>HERBES ET \u00c9PICES COMPL\u00c9MENTAIRES<\/strong><\/h2>\n<p>Vous avez l&rsquo;intention de cr\u00e9er vos propres m\u00e9langes d&rsquo;\u00e9pices ou vous vous demandez quelles sont les autres \u00e9pices qui se marient bien avec la cardamome ? Dans ce cas, profitez de ces conseils.<\/p>\n<p>La cardamome se marie parfaitement avec la cannelle, la muscade et le clou de girofle. Toutes ces \u00e9pices sont pr\u00e9sentes dans de nombreux m\u00e9langes d&rsquo;\u00e9pices indiens, dont le garam masala. La cardamome se marie aussi tr\u00e8s bien avec le romarin.<\/p>\n<h2><strong>SUBSTITUTS DE LA CARDAMOME <\/strong><\/h2>\n<p>Si la cardamome est utilis\u00e9e dans une recette, mais que vous n&rsquo;en avez pas chez vous ou que vous ne pensez pas l&rsquo;utiliser assez souvent pour en acheter un pot, il existe quelques alternatives intelligentes.<\/p>\n<p>Si vous voulez retrouver l&rsquo;ar\u00f4me chaud et les saveurs terreuses de la cardamome, choisissez des \u00e9pices comme le piment de la Jama\u00efque, la cannelle et la noix de muscade. Un m\u00e9lange sp\u00e9cial de cannelle et de gingembre est un excellent substitut \u00e0 la cardamome, car cette combinaison reproduit toute la complexit\u00e9 de l&rsquo;\u00e9pice.<\/p>\n\n            <\/div>\n            <\/div>\n<\/section>\n\n\n<section class=\"content-section content-section--top-mask content-section--turquoise\">\n        \n    <div class=\"image-with-text container container--small\">\n                    <div class=\"image-with-text__content\">\n                <h2><strong>COMMENT UTILISER LA CARDAMOME ? <\/strong><\/h2>\n<p>Si vous recherchez une saveur sup\u00e9rieure (qui ne le fait pas), il est toujours pr\u00e9f\u00e9rable d&rsquo;acheter des gousses de cardamome et de moudre les graines vous-m\u00eame. En effet, une fois moulue, la cardamome perd ses huiles essentielles, ce qui amoindrit son go\u00fbt. La vari\u00e9t\u00e9 pr\u00e9-moulue est moins forte.<\/p>\n<p>Vous pouvez \u00e9craser l\u00e9g\u00e8rement les gousses et les ajouter aux rago\u00fbts ou aux soupes. Les gousses ext\u00e9rieures se dissoudront, mais les petites graines noires \u00e0 l&rsquo;int\u00e9rieur rel\u00e8veront agr\u00e9ablement votre plat. Vous pouvez \u00e9galement ajouter les gousses \u00e0 du riz bouillant pour l&rsquo;assaisonner. L&rsquo;eau se charge de l&rsquo;ar\u00f4me et ajoute une d\u00e9licieuse note florale. N&rsquo;oubliez pas de retirer les gousses avant de servir le plat, car si vous les croquez directement vous risquez d&rsquo;avoir une sensation de saveur (trop) intense.<\/p>\n<p>Pour une saveur spectaculaire, il est conseill\u00e9 de faire griller les gousses de cardamome verte dans une po\u00eale s\u00e8che pendant quelques minutes. Laissez-les refroidir, puis retirez les graines des gousses. La cardamome crue se conserve encore plus longtemps (jusqu&rsquo;\u00e0 deux ou trois ans), m\u00eame si elle est stock\u00e9e \u00e0 temp\u00e9rature ambiante. Une fois moulues, les graines de cardamome perdent rapidement leur saveur. Il est donc pr\u00e9f\u00e9rable de les utiliser d\u00e8s que possible.<\/p>\n<h2><strong>PEUT-ON CONGELER LA CARDAMOME ?<\/strong><\/h2>\n<p>Vous pouvez congeler la cardamome dans un r\u00e9cipient herm\u00e9tique pour prolonger sa dur\u00e9e de conservation. Toutefois, la cardamome d\u00e9congel\u00e9e n&rsquo;a pas la m\u00eame saveur puissante et \u00e9pic\u00e9e que la cardamome fra\u00eeche.<\/p>\n\n            <\/div>\n
