It\u2019s not 100% clear where the dish originated, but it\u2019s generally understood to have been dreamt up somewhere within the Persian empire, which covers modern-day Iran, Turkey and Syria. It was brought to India by the Mughals \u2013 a Muslim dynasty which came to rule over the Hindu population.<\/span><\/p>\n<p><span style=\"font-weight: 300;\">The biryani \u2013 pronounced <\/span><i><span style=\"font-weight: 300;\">bi-ree-aan-ee<\/span><\/i><span style=\"font-weight: 300;\"> \u2013 is thought to have come from the Persian <\/span><i><span style=\"font-weight: 300;\">birinj<\/span><\/i><span style=\"font-weight: 300;\">, which just means <\/span><i><span style=\"font-weight: 300;\">rice<\/span><\/i><span style=\"font-weight: 300;\">. Or perhaps it\u2019s from <\/span><i><span style=\"font-weight: 300;\">biryanan<\/span><\/i><span style=\"font-weight: 300;\">, which means <\/span><i><span style=\"font-weight: 300;\">to fry<\/span><\/i><span style=\"font-weight: 300;\">. The jury\u2019s out.\u00a0 Wherever it got its name, it\u2019s a very popular dish in northern India, and a common sight on Indian, Nepalese and Bangladeshi menus right here in the UK.<\/span><\/p>\n<h3>Is biryani spicy?<\/h3>\n<p>Most biryanis tend to be considered mild, however if you\u2019re cooking a biryani at home, you can experiment with spice level to find the perfect one for your palette.<\/p>\n<h2>Types of biryani<\/h2>\n<p>In India alone, there are tons of different biryanis, known to have been enjoyed by the Mughal leaders who brought the dish to India in the first place. Let\u2019s talk about a few of our favourites\u2026<\/p>\n<h3>Thalasseery biryani<\/h3>\n<p>This mild, fishy biryani is popular along the Malabar Coast, which runs up the western edge of the tropical subcontinent. Instead of lamb or goat, it\u2019s made with prawns, alongside lots of\u00a0<a href=\"https:\/\/www.tilda.com\/how-to\/how-to-make-ghee\/\"><strong>ghee<\/strong><\/a>\u00a0and spices including onion, ginger, garlic, lime and coriander.<\/p>\n<h3>Awadhi biryani<\/h3>\n<p>This tasty biryani is from the city of Lucknow in northern India. It stands out from the rest due to the way it\u2019s cooked \u2013 low and slow over a fire in a closed clay pot. The\u00a0<em>dum pukht<\/em>\u00a0cooking method is basically the same as using a\u00a0<a href=\"https:\/\/www.tilda.com\/blog\/equipment-guide\/your-ultimate-guide-to-slow-cookers\/\"><strong>slow cooker<\/strong><\/a>, and can be left to simmer away for 24 hours. The dish itself contains saffron and cinnamon to add a bit of depth to the rice, which is mixed with spicy chicken or beef.<\/p>\n<h3>Beary biryani<\/h3>\n<p>Despite its name, this biryani contains absolutely zero bears. It\u2019s from south Karnataka, on the southwest tip of India, and can be made mild or spicy, depending on where it\u2019s served. The ghee and spice mixtures are joined by rice and a protein, which is generally chicken, beef or fish.<\/p>\n<h3>Hyderabadi biryani<\/h3>\n<p>There are two main variations of biryani in the Telangana state capital of Hyderabad \u2013\u00a0<em>pakki<\/em>\u00a0and\u00a0<em>kacchi<\/em>. Both dishes are thought to date back to the Mughal invasion in the late 17th\u00a0century. The pakki consists of separately cooked rice and meat, which are then added together just before serving. While the kacchi is made with raw cuts of marinated meat (chicken or lamb), which are stuffed between layers of basmati, and cooked slowly in a pot over a fire with lots of spices.<\/p>\n\n            <\/div>\n            <\/div>\n<\/section>\n\n\n<section class=\"content-section content-section--top-mask content-section--yellow\">\n        \n    <div class=\"image-with-text container container--small\">\n                    <div class=\"image-with-text__content\">\n                <h2><span style=\"font-weight: 600;\">Which spices are used in biryanis?<\/span><\/h2>\n<p><span style=\"font-weight: 300;\">Although most biryanis are on the milder side, some do pack a bit of a punch. In most cases, the spices on a shopping list will feature the likes of ginger, garlic, coriander, saffron and cinnamon. Of course, if the dish is going to be a spicy one, red or green chillies can be added.<\/span><\/p>\n\n            <\/div>\n        \n                            \n                    <div class=\"image-with-text__image\">\n                <img decoding=\"async\" alt=\"biryani one pot and suaces\"  src=\"https:\/\/www.tilda.com\/wp-content\/uploads\/2023\/06\/Biryani-header-image.webp\" width=\"\" height=\"\" loading=\"lazy\"\/>            <\/div>\n            <\/div>\n<\/section>\n\n<section class=\"content-section content-section--top-mask content-section-- u-contrast-text--\">\n    <div class=\"free-content container container--small\">\n                    <div class=\"free-content__content user-content\">\n                <h2>How to make biryani<\/h2>\n<p>You\u2019ll need two sets of ingredients, one for the marinade and one for the main biryani itself.<\/p>\n<h3><em>Ingredients for marinade<\/em><\/h3>\n<ul>\n<li>2cm ginger \u2013 peeled and grated<\/li>\n<li>3 cloves garlic \u2013 crushed<\/li>\n<li>1tsp chilli powder<\/li>\n<li>1tsp salt<\/li>\n<li>1tsp turmeric<\/li>\n<li>3tsp garam masala<\/li>\n<li>2tsp ground coriander<\/li>\n<li>2tsp ground cumin<\/li>\n<li>1tsp black peppercorns crushed<\/li>\n<li>1 stick cinnamon broken in half<\/li>\n<\/ul>\n<h3><em>Ingredients for biryani<\/em><\/h3>\n<ul>\n<li><a href=\"https:\/\/www.tilda.com\/products\/pure-steamed-basmati-rice\/\">x2 pouches of Pure Steamed Basmati Rice<\/a><\/li>\n<li>450g lamb \u2013 diced into bite sized pieces\n<ul>\n<li>You can swap out the lamb for another protein to suit your tastes or just to mix things up<\/li>\n<\/ul>\n<\/li>\n<li>2tbsp sunflower oil<\/li>\n<li>1tsp cumin seeds<\/li>\n<li>2 onions sliced<\/li>\n<li>3 tomatoes (deseeded and diced)<\/li>\n<li>3 bay leaves<\/li>\n<li>500ml vegetable stock<\/li>\n<li>Handful of spinach<\/li>\n<li>125ml natural yogurt<\/li>\n<\/ul>\n<h3>How to make your biryani<\/h3>\n<ol>\n<li>Place all ingredients for the marinade in a glass bowl, mix well with diced lamb and chill for at least 2 hours (ideally overnight) and remove from fridge 1 hour before cooking<\/li>\n<li>Prepare the rice by soaking it for at least 30 minutes and rinsing well in a sieve until the water runs clear<\/li>\n<li>Add the oil to a large hot pan and fry the cumin seeds<\/li>\n<li>Once the seeds start to sizzle, add the onion and fry until soft and brown<\/li>\n<li>Pour in the lamb mix, add the tomatoes and continue to cook on a high heat for 5 minutes while stirring continually to make sure the spices are cooked through<\/li>\n<li>Turn the heat to low, cover and simmer for 25 minutes so that the lamb becomes tender<\/li>\n<li>Add the bay leaves, rice and vegetable stock, stir and cover again<\/li>\n<li>Leave on a low heat for a further 20 minutes<\/li>\n<li>Turn off the heat, add spinach and stir once, then replace the lid<\/li>\n<li>Let this stand for 10 minutes to ensure the rice is light and fluffy<\/li>\n<li>Serve with a dollop of yogurt<\/li>\n<\/ol>\n<h3>Biryani rice<\/h3>\n<p>In order to make the perfect Biryani rice, you want to look for something that\u2019s long-grained, and ever so slightly aromatic for the perfect flavours.<\/p>\n<p>We\u2019d always recommend<a href=\"https:\/\/www.tilda.com\/products\/pure-basmati-rice\/\"><strong>\u00a0<\/strong>basmati<\/a>\u00a0for dishes like this.
